Not everyone can fit a turkey in their oven, including me. My oven is a counter-top convection oven, and a whole turkey would just not fit in my 30cm wide oven.

So, sometimes we turn to smaller poultry for our Christmas/holiday dinners (and yes, buying a fully roasted turkey is possible, but anyway). This roast chicken is easy, and honestly, anyone can do it. Plus, it’s literally 3 ingredients.

Ingredients
125 grams salted butter, at room temperature
2 tbsp ground peri-peri
1 whole chicken

- Preheat the oven to 200°C.
- In a food processor, add your butter and peri-peri. Blitz it until it’s smooth and creamy, and the peri-peri is evenly distributed through the butter.
- Place your chicken on a baking tray. and smother it in the peri-peri butter. Cover the entire chicken in the butter, leaving no trace of chicken uncovered.
- Place the chicken in the oven and roast for 45 minutes to an hour, depending on the size of your chicken, until the juices run clear.
- Serve hot.
