Peri-Peri Roast Chicken

Not everyone can fit a turkey in their oven, including me. My oven is a counter-top convection oven, and a whole turkey would just not fit in my 30cm wide oven.

So, sometimes we turn to smaller poultry for our Christmas/holiday dinners (and yes, buying a fully roasted turkey is possible, but anyway). This roast chicken is easy, and honestly, anyone can do it. Plus, it’s literally 3 ingredients.

Ingredients

125 grams salted butter, at room temperature
2 tbsp ground peri-peri
1 whole chicken

  1. Preheat the oven to 200°C.
  2. In a food processor, add your butter and peri-peri. Blitz it until it’s smooth and creamy, and the peri-peri is evenly distributed through the butter.
  3. Place your chicken on a baking tray. and smother it in the peri-peri butter. Cover the entire chicken in the butter, leaving no trace of chicken uncovered.
  4. Place the chicken in the oven and roast for 45 minutes to an hour, depending on the size of your chicken, until the juices run clear.
  5. Serve hot.
