Sometimes you don’t want to spend ages prepping and making dinner. Sometimes, you just want something simple and delicious that doesn’t require a lot of effort. Despite all of the cooking and baking that I do, believe me when I say that I get it. I definitely spend my fair share of nights not wanting to spend too much time in the kitchen, even if cooking is my therapy.

The beauty of this pasta dish is that it comes together so quickly, you can be eating within 15 minutes of walking through your front door, if you use fresh pasta. If you choose to use dried pasta, you’ll be eating within 30 minutes of walking into your house.

It’s a sort of mixture between aglio e olio, carbonara and cacio e pepe. It’s delicious, it really is.
Ingredients

500 grams fresh pasta
250 grams bacon
5 cloves garlic, peeled and thinly sliced
50 grams Parmesan, grated
red chilli flakes
olive oil
pepper

- Boil water and cook pasta according to instructions, reserving the pasta water.
- In a frying pan, add some olive oil and turn the heat up to medium-high. Add the bacon to the pan, and cook for 3 – 4 minutes, then add the garlic and cook for a further 2 minutes.
- Add the pasta to the pan, along with the chilli flakes, some of the pasta water, and the cheese.
- Stir all the ingredients through, ensuring everything is evenly distributed. Season with pepper and serve.
